With the best regression of two factors of temperature and relative humidity(RH),the experiment studied the regularity of activity of protease,the main chemical composition and pigment degradation under different yellowing environment were studied in this paper.And the protease activity and main chemical constituents under the best baking environment was studied too.The results showed that the activity of protease increased first and then decreased and increased last in baking yellowing stage(0-60h);while the activity of increased first and decreased last.The trend of total chlorophyll,carotenoids,TN,nicotine and TN to nicotine decreased,while the effect of RS,Schmuck's value,total sugar to nicotine was opposite.When the temperature was in range of 39.0℃to 40.0℃and HR was in 84%to 87%,psychrometric difference was 2.0℃to 2.5℃in baking 36h,it was conducive to degrade of protein.In order to improve the appearance quality and RS,coordinating the Nitrogen Compounds,and increasing the aroma and taste,three kinds of optimal temperature and humidity conditions for yellowing environment were acquired,which were 37.5℃to 38.5℃for temperature,85%to 87%for humidity and 1.5℃to 2.0℃for psychrometric difference;39℃to 40℃for temperature, 77.5%to 79.5%for humidity,3.0℃to3.5℃for psychrometric difference;36.5℃to 37.5℃for temperature,75%to 77%for humidity,3.0℃to 3.5℃for psychrometrie difference.
