Hazard Analysis and Critical Control Points (HACCP) is an international recognized food safety assurance system, which is an efficient preventive food control system to control significant hazards. Application of HACCP to aquaculture is in the beginning, while its'positive impact to control the fish and fishery products quality is significant. This paper focused on Fugu rubripes farm, and aimed to establish a mode of HACCP system to prevent fish disease and assure the eatable safety of Fugu rubripes.First, the prerequisite document, which was the basis of HACCP system, was built with reference to the existing laws and standards in China. It precribed sanitary requirment and operation regulations about circumstance , water quality, farm staff, seedling and roe breeding, feed, medicine, machinery and equipment, farming,harvesting and delivering, management and documents.Second, complying with the HACCP establishing steps and using the basic principles of HACCP, potential hazards throughout the process of Fugu rubripes farming were analyzed. Hazards from drug abuse was significant. And critical control points were identified. They were medicine check,fish seperation,winter transferation.Third, after running of HACCP,it was found that the product quality control improved and the cost reduced. However, some limitations were found in the running of HACCP system, and improved measures were brought forward.
