The safety and sanitation management for agricultural products should meet the challenge of WTO.In order to ensure the safety and sanitation quality of Penaeus and break the technical barriers set by other countries in international trade, Risk analysis in combination with Good Aquaculture Pratices (GAP) and Hazard Analysis and Critical Control Point (HACCP) was applied to the aquaculture and manufacturing of Penaeus in this title.Through the qualitative evaluation to the biological hazards of Penaeus, the results indicated that Vibrio cholerce, Vibrio parahaemolyticus and Salmonlla were the potential critical hazards; through the evaluation to the chemical hazards of Penaeus , the results indicated that the consumption of Penaeus was safe because the level of heavy metal and residual of pesticides and veterinary drugs was lower than their ADI. However, the residual monitoring results of shrimps for export indicated that the level of chloramphenicol, nitrofurans, lead and arsenic was above the standard level. So, it is necessary to strengthen the management to the drug use of aquculture fields, the forbidden drugs must not be used, and the environmental and pesticides contaminition must be noticed.As the risk management measure, we discussed in this title to implement GAP during the farming period and HACCP in the processing period to control the contamination from pathogenic microorganism, pesticides residue, animal drugs residue and environment contamination and to realize the full food safety in the process of "from farm to table" .
