In order to reduce the content of pectin and cellulose in tobacco leaves after flue-curing and improve the adverse effects of pectin and cellulose on tobacco leaves,the influences of the different amount of pectinase and cellulase on the content of pectin and cellulose,chemical components and neutral aroma components in different part leaf was studied. The results showed that :The content of pectin and cellulose in B2F,C3F and X2F was decreasing as increasing the quantity of pectinase and cellulase respectively and the difference between the most treatments and checks was remarkable or extremely significant. The highest degradation rate of pectine was 42.09% appeared on treatment five in B2F and the highest degradation rate of cellulose was 70.96% appeared on treatment five in X2F . The most influence on the content of pectin and cellulose was the maximum dose level of amylase.The content of total sugar on treatments was higher than that on checks by pectinase and cellulose and there was a sigficantly negative corre1ation between the content of total sugar and pectin or cellulose.The effect was significant on degrading the content of pectin and cellulose and increasing the content of sugar by pectinase and cellulose .The content of chemical components in tobacco leaves was changed by pectinase and cellulose. The ratio of total sugar to nicotine and nitrogen to nicotine could keep or tend to be coordinate when the content of pectin and cellulose decreased.The contents of the products from phenylalanine, carotenoid and browning reaction and neophytadiene were changed by pectinase and cellulose in B2F,C3F and X2F.when pectinase was applied ,the total contents of neutral aroma components on treatments was higher than that on checks and the biggest increase amplitude reached 16.55% on treatment four in B2F;the total contents of neutral aroma components on treatments was higher than that on checks except treatment one and the biggest increase amplitude reached 29.12% on treatment five in C3F;the total contents of neutral aroma components on treatments was higher than that on checks except treatment one and the biggest increase amplitude reached 55.08% on treatment four in X2F.when cellulose was applied, the total contents of neutral aroma components on treatments was higher than that on checks and the biggest increase amplitude reached 22.86% on treatment four in B2F;the biggest increase amplitude reached 24.96% on treatment two in B2F;the total contents of neutral aroma components on treatments was lower than that on checks except treatment three in X2F.the results above showed that the total contents of neutral aroma components were increased best by the dose level of amylase on treatment four or five.
