Vegetable is the staple food that people necessarily acquire in everyday life, and the vital source of vitamin, mineral substance, dietary fiber and so on. Vegetable is the indispensable nutrition in our bodies, and play a role in daily life. Vegetable cleaning is the important procedure to vegetable processing. At present, Vegetable cleaning mainly rely on the way of handwork which efficiency is very low, and not meet the demand of industrialization and intensification. According to the present position, the vane wheel vegetable cleaning device was designed.The structures of transmission and cleaning equipment were designed. According to three kinds of vegetable pakchoi, spinach, Shanghai cole, the working radius of vane wheel being 227mm was defined. On the base of this, the radius of vane wheel being 235.5mm was also defined. Moreover, the inner wall diameter being 485mm and the height being 150mm of the cleaning cylinder was also defined. The cleaning principle of the vane wheel vegetable cleaning device and the motive orderliness of the water stream was analyzed. In allusion to the dynamic source of water stream and vegetable, that is, vane wheel which was analyzed the force distribution in the static and motive water. For the reference of the reliability of the structural design, based on the ANSYS software environment, used finite element method to analyze the vane wheel.According to the design parameters of structure, the experimental prototype was processed and manufactured, and then, some experiments were done. The experiments indicated that the device can clear the contamination on the surface of the vegetable away effectively, and hardly damage the vegetable.In the process of the vegetable cleaning, various possible influencing factors of the cleaning effects were analyzed. In order to make experiment conveniently and favorably, there are three most influencing factors have being chosed, that is, rotation speed, cleaning time, cleaning amount. The paper selected three factors and three levels to make orthogonal experiments. According to the analysis of the experiment results, the better level of various factors and the optimal combination was found out. The experimental results indicated that the speed being 80r/min, the cleaning time being 4 minutes, and the cleaning amount being 250g is the optimal combination.
