This research start to choose Chinese language textbook "The New Practical Chinese Reader" written by Professor Liu Xun and supported by The National Office for teaching Chinese as a Foreign Language (NOTCEC), this book is chosen for textbook in Higher Education in Thailand. The textbook has6volumes and70lessons, which are the core content of this research.The purposes of the research were First to organize and arrange the data of culture in Chinese language textbook for foreign students and divided the data about Chinese culture into2main areas "The knowledge culture" and "The Communication culture" and to take the both areas of cultures to be divided into units by dividing "The knowledge culture" into10units and to be divided "The Communication culture" into11units, collect and show scale of scattered data about Chinese culture in the structure of textbook in4parts; lessons, vocabulary, exercises, and extra reading. Second to design questionnaire of interesting of100Thai students about Chinese culture, then analyzed level of interesting about Chinese culture of the sampling are differences. Last, concluded the arrangement of data of culture in Chinese language textbook for foreign students and recommendations has given.The method of the research can be divided into3levels; volume1-2for the beginning levels, volume3-4for the mediate level, and volume5-6for the high level. The researcher collected all of the data about Chinese culture from the textbook found that there are a lot of data about Chinese culture in the textbook and then the researcher also study about the structure of this textbook in4parts; lessons, vocabulary, exercises, and extra reading and then found that there are more data about Chinese culture. A part from that the researcher studied the structure of textbook from the four parts; Lessons about vocabulary, exercises and supplementary reading for cultural data by dividing data and found that in each volume there are more data about cultures and how to a in different forms. The volume1-2there is data of culture in both sides scattered in various parts of exercises. But the volume3-4there is data of cultures in main both sides scattered in the various parts of lessons. Volume5-6found that there is data about "The knowledge culture" which is scattered in many parts of exercises and there is data about "The communication culture" which is scattered in many parts of lessons. And then, bring all of10units in the whole textbook to be arranged data about culture to show the portions of cultures of2main areas.At the end, bring the data of the whole culture in textbook to compared with the interests of Thai students found that in the part of "The knowledge culture" in some units can be matched with the interests of Thai students, in some topics are not matched with the interests of Thai students. But "The communication culture" found that there are2feedbacks that is to say; some units can be matched with the interests of Thai students. But the most of units and the interests of student are not in the same ways. There are more amounts of the culture data in some units. In some units there are amount of data did not support with the interests of students.
