Application And Evaluation Of5S Management In School Canteens Of Suzhou New District

Objective：To popularize and improve5S management, the implementation of5Smanagement was analyzed and evaluated in school canteens of Suzhou New District(SND).Method: Using stratified random sampling method, the food hygiene in39schoolcanteens was analyzed and evaluated before and after implementation of5Smanagement. Quantitative score results and the scoring rate was calculated using5Sscore sheet. Data were analyzed using SAS8.1for statistical analysis.Result: before the5S management, the average score of food safety in39schoolcanteens was99.3points; while it increased to118.5points after6-months’5Smanagement. In brief, the score increased by35.5%,10.1%,3.8%,7.1%and10.0%inthe following5aspects: structurise, systematise, sanitise, standardise and self-discipline.On the other hand, the “Demonstration-class” canteens quantitative score increased18.0%; the “A-class” canteens quantitative score increased16.3%;“B-class” canteensquantitative score increased by29.4%after the5S management. During theimplementation of5S management, hygiene and safety conditions have been improvedto varying degrees in some key aspects of food safety such as retention samples ofhigh-risk foods.Conclusion:1) After implementation of the5S Management, the food safety andthe quality management level have improved in39school canteens in Suzhou Newdistrict.2) The5S management can improve internal management, standardizedproduction and management behavior of employees, and improve food security situation of food production units, guide and improve the overall level of the whole foodindustry. Thus, this study demonstrated that the5S management has a greater role inpromoting food hygiene and safety standards.
