Discussion On The Establishment Of ISO22000 System In Hospital Cafeteria

In recent years,the food safety problems has been more and more serious.Some reports of these problems has caused a high concern and attention from the society and the government.Many of the food safety problems are found in canteen.And theseproblems usually becomegroup food safety events which are more harmful and serious to society.At present,because of the complexity of medical treatment and social environment,the contradiction between doctors and patients has increased year by year.Pressures for hospitals are also increased.So,ensuring the food safety for hospital'scanteen,the logistics support system of hospital,is imperative and meaningful.However,the hospital canteen has the complexity to meet the special needs of the patients,resulting in the variety of raw materials,complex process,and variety of cooking methods.It is hard to control andcontain many hidden dangers.Therefore,improve the management system of food is important to ensure the food safety.ISO22000 Food Safety Management System <food safety management system-the requirements of any organization in the food chain> is the world's current food safety standards and food laws.It suitall aspects of food chain,such as feed production,initial consumption,food processing,transportation,warehousing,retail,catering management and related organizations,equipment,packaging materials,food additives,accessories production,allcan be carried out in accordance with ISO22000 production operations and management.Therefore,it is necessary and feasible to introduce ISO22000 management system in the safety management of hospital canteen.According to the idea of ISO22000 food safety management system,investigate and survey the canteen of Chinese people's Liberation Army General Hospital(301)Military Supplies Office.Analysis the possibility for building the ISO22000.According to the requirements of the ISO22000,the initial establishment of ISO22000 system in Chinese people's Liberation Army General Hospital(301)Military Supplies Office's canteen has been preliminary discussed:(1)The specific steps for the implementation of ISO22000;(2)establish the prerequisite Program(PRP)and the operational prerequisite Program(OPRP);(3)Analysis the danger of canteen processing.Determine the key control points CCP and the key control limits CL.(4)determine the detection procedures,corrective measures,verification procedures;(5)A pre assessment of the effectiveness of the implementation.
