In recent years, the overall situation of food security in China is not optimistic, often appear clenbuterol, tainted milk, drainage oil and other words, people will trigger the sensitive nerve. As a high school cafeteria food security work, not only have to bear the heavy responsibility to ensure food safety, but also to shoulder the responsibilities of maintaining social harmony and stability of colleges and universities. As the saying goes: "The stability of the society is reflected in the high school, the stability of colleges and universities is reflected in the canteen". Canteen catering services not only to protect the school teaching and scientific research work, but also related to the vital interests of the staff and students.Canteens of colleges and universities due to the large number of daily use of food raw materials, many varieties, once the food raw material quality management negligence, not standardized, mere form, then the university cafeteria purchase of food raw materials are most likely to be found: vegetable pesticide residues exceeded, cooked food excessive nitrite, ingredients expired metamorphism, Component shortage such as problems, normal operation of these problems not only directly affect the cafeteria, more against the diner’s health and vital interests, therefore, to carry out the college canteen food raw material quality management improvement study is very necessary.In this paper, the quality management of food raw materials in the University of X is improved, and the problems of the management of the raw materials in the food raw materials are not standardized, the process is not perfect and so on. Through the literature research on the quality management of raw materials in domestic and foreign university canteen, the paper obtains the feedback information, and uses the analytic hierarchy process to calculate the weight of the factors affecting the quality of the raw materials and the way to determine the priority. Using DMAIC process optimization model to improve and optimize the quality management of food raw materials.Through this research, we have improved the internal quality management of the university canteen, optimized the supply chain management and purchasing acceptance process, standardized the operation standards of quality management, improved the customer satisfaction, the number of complaints decreased significantly, greatly reduced the number of food raw materials, to ensure the safety and health food raw materials, but also realized the purchase cost reduction, maintaining the stability of food prices, and maintain the campus harmony.
