Our country is being in harmony with world big economical system step by step with rapid development of global economy,the quantity and variety of international foodstuff trade are increasing year after year.People are requiring more and more healthy and safety food with the people living standards enhancement.So a new and effective food safety management system—HACCP was led into our country,more and more extensive attention was pay in export food industry.ObjectiveThis paper makes clear the process of biscuit production and technology,critical control point(CCP)of the process,the change of production and exportation after HACCP system were carried out in factories through investigation on establishment and implement of HACCP system in export-biscuit factories in Dongguan port,and analyses the reasons of change,raises measure of improvement.MethodUsing reviewing investigation and present situation study methods,conducted hazard analysis and formed table of plan by making a pair of two factories randomly which were certificated through HACCP system whether or not in export-biscuit factories in Dongguan port,and then carried out HACCP system.After collecting the data of production and exportation in two factories,conducted lateral and vertical compare,obtained the results of qualified products ratio,exportation output,production output,Invested capital to output ratio,staff moving ratio around the implement of HACCP system and carrying out HACCP system whether or not,also do some analysis.ResultThis investigation shows the qualified products ratio increases remarkably after established and carried out HACCP system in export-biscuit factories,also same phenomenon take place in three CCP of the process of biscuit production.But the data of production and management in factories(For example:exportation output,production output,Invested capital to output ratio,staff moving ratio )shows non-remarkable increase or no change.The result single factor analysis demonstrates:the qualified products ratio has relation to condition of establishment and implement of HACCP system in export-biscuit factories,the qualified products ratio increases following with establishment and implement of HACCP system in factories.ConclusionThe critical control point(CCP)in biscuit production and technology are compound,oven and bake,pack.The qualified products ratio has remarkable relation to establishment and implement of HACCP system in export-biscuit factories,But exportation output,production output,Invested capital to output ratio,staff moving ratio have non-remarkable relation to establishment and implement of HACCP system.
