Food safety is an important issue involving the public health. In recent years, with people's health consciousness constantly enhancing and food safe event frequently happening, the issue of food safety has become the focus of people's attention day by day. However, food safety engineering is very complicated, which relate to agriculture, food manufacture, food logistics, food sell, market norms and government monitoring etc. In the fact of the food safety of our county is backward in technique, is imperfect in supervisory system, how to take some measures in the supply chain link has realistic research meanings.As one of important food in our country, the soybean product's quality and safety concerns people's healthy. This paper discussed the soybean products quality and safety problem, analysis hazard of soybean products supply chain with the modern food quality and safety management theory and methods, constructed the soybean products quality and safety monitoring system. The main contents include:Firstly, it proposed the research background and significance of the paper, discussed the correlative theories at home and abroad.Secondly, it analysis the characteristic, actuality and quality problem of soybean product, discussed the application of HACCP and SPC in food quality and safety. Soybean supply chain was compartmentalized into four parts: raw material stock, soybean product manufacturing, finished products logistics and soybean product selling. It analysis hazard of soybean products supply chain and constructed the soybean products quality and safety monitoring system.Thirdly, it studied the inspect methods of soybean product, and studied the inspect process in soybean products supply chain, with the SPC theory and control chart.In this paper, statistical process control thinking and methods integrates with HACCP system, and was applied in soybean product quality and safety monitoring system, strengthened the efficacy of HACCP system, developing the theory of food quality and safety monitoring. It also offered valuable experience to consummate the food quality and safety monitoring system in our country.
