After many years development, the structure of traditional logistics theory is formed systematically in China. However, cold chain logistics, as a special kind of logistics, has not yet received due attention. With the development of the national economy and the continuous improvement of people's requirements for food, cold chain logistics will enjoy more and more attention.In this thesis, we analyzed the status quo of China's food cold chain logistics from demand side and supply side. And then, we summed up the existing problems of the food cold chain logistics development in China, and put forward the proposals for China's food cold chain logistics development.The objectives of storage and transportation in cold chain are chilled and frozen foods, which are perishable and easy to deteriorate, so food safety is lifeline to cold chain logistics. In this thesis, we have done some research on possible quality variation of food in the cold chain, and analyzed the influence of the low temperature on the food quality. This thesis also expanded the study on the application of Hazard Analysis and Critical Control Point (HACCP) and explored the application of HACCP in the food cold chain logistics.Based on traditional Vehicle Routing Problem with Time Windows, we analyzed the special characteristics of chilled and frozen food distribution, and constructed the related cost functions, including loss cost result from food spoilage, the penalty cost due to violating the time window, the energy cost incurred by refrigeration facility, and transportation cost the same as tradition VRP. By minimize all the cost mentioned before; we built a mathematical model to optimize the distribution schedule. And then, we provided the ILOG OPL codes to solver the model in terms of a numeric case.
