Pork production has undergone an unprecedented development. Pork products brought great economic, social and ecological benefits.The live pig is the livestock pillar industry in Tai'an city. The pork production reached 421,000 tons in Tai'an City in 2005,.Compared with that of 2000 before the implementation of "Tenth Five-Year Plan" , the meat production has grown 66.7%. At the end of the "Eleventh Five-Year Plan ", the city's pig population in 2010 reaches 2,109,000, 4,235,000 reaches slaughter, and meat production reaches 527,000 tons. The Pig industry of Tai'an City has undergone an unprecedented development, the emergence of Yinbao and Bajie, two pork processing Leading enterprise, becomes the pork product leaders, But due to the hygiene, additives, drugs and heavy metal residues and other harmful effects, pork exports is relatively low. The problems of quality and safety of Tai'an City is restricting the pork industry to enhance competitiveness, but also seriously affected the physical and mental health of consumers.The implementation of supply chain management is an effective way to resolve the current problem of the pork quality and safety in our country. In the pork supply chain with high quality, pork processing enterprises are at the core of the role, and its quality and safety is the most important. On the base of the literature, theoretical analysis, expert interviews, field research with the thought and theory of the value chain, industrial chain and supply chain management as a guide, this thesis uses system analysis, comparative analysis, model analysis and so on as methods, focusing on the four areas of awareness from the system, the quality and safety analysis in pork processing enterprises, critical evaluation of the main selection and strategy recommendations,and tries to do a more in-depth research on the problems on pork quality and safety in Tai'an City, and how to build the management system of the pork quality and safety. The research indicated that the pork quality and safety are affected by pig's variety, the feed security, the veterinary medicine security, the raising scale, pig's epidemic disease, the disinfection situation of transport means, the quarantine method and the result of live pigs, the pork inspection procedure and the result, the slaughtering water quality examination method and the result, the pork cooling temperature safely, the state of the health and veterinarian's qualifications of slaughtering workers, the state of health of the sales personnels, the pork storing sanitary condition, as well as the sanitary condition of pork break points and so on .The research and analysis of the quality and safety of meat processing enterprises in Tai'an City are the basis of this study. Through the introduction of typical business practices and the analysis on the problem of quality and safety in the prosess of production, We try to find the affecting factors of pork quality and safety, and analyse and induct the affecting factors. On the basis of the analysis of the affecting factors of pork quality and safety in the processing of raising, slaughter and circulation sales, this article tries to design the evaluation index system of a pork processing enterprises in the level of quality and safety, and then builds the evaluation model, and evaluate pork processing enterprises scientifically in Tai'an City. The findings are Yinbao company is obviously better than the Bajie company in the live pig raising aspect. The slaughtering processing control aspect, two companies both wait for continually enhancing. In the circulation sales control aspect, two companies are both quite good.On the base of the quantitative evaluation, combined with the result of qualitative analysis, this thesis comes to the conclusion that there exist problems of quality and safety in varying degrees in the processing of raising, slaughter and circulation sales in the pork processing enterprises in Tai'an City. The leading enterprises are better, followed by medium-sized enterprises. According to the problems, this thesis tries to give the management strategies to strengthen and upgrade the management of pork quality and safety of the meat processing enterprises in Tai'an City. |
