Assessment On Safety Risk Of Composite Food Additives In Productive Process In Shanghai

Objective To find the main problems of composite food additives in the productive process, make risk assessment, and put forward suggestions and countermeasures for the supervision of production license and certificate of composite food additives.Methods The investigation was carry out in 75 composite food additives manufactories, and comprehensive analysis, the risk matrix and Borda number were used on the assessment of safety risk of composite food additives in their productive process.Results The composite food additives manufactories produced variety of products, involving 11 of total of 16 categories of food (GB2760),with the proportion of 68.75%. The Sino foreign joint venture and wholly foreign-owned manufactories had the capability of independent research and development, yet the domestic enterprises were with smaller scale generally. Most of manufactories had less than 500 square meters of area of production site,and less than 50 employees. According to risk ranking, in the productive process of composite food additives, one of the most important was raw materials, and next productive process, followed by the quality of employees, production/testing equipment requirements, sanitary conditions of productive process, legitimacy of product formula, the label/manual/packaging, product quality traceability system.Discussion and suggestions The composite food additives has higher pass rate overall. The quality of the products is generally safe and controllable. But in the productive process, the raw materials, process control, the quality of employees, production/inspection equipment, production facilities still exist certain security risks. Manufactories need to further implement the responsibility of quality safety, strict inspection of raw materials, strict productive process and factory inspection, promoting the quality of employees, and effective control safety risk in productive process.
