Owing to soy isoflavane possess varied biological activities, it use extensively in health foods and drug in especial anticancer and blood disease. Soy isoflavone exist major in bean. The bean is used to press oil except for foods. Soy isoflavones are washed away because of bean cake of extracted oil is used as fertilizer or feed.In this paper, the isoflavones in bean cake are extracted by alcohol solution and water solution and is concentrated by solvent extraction and ion exchange method. The anti-free radical activities of soy isoflavone have been studied also. The obtained results are shown as follows;l.The extracted isoflavones in semifinished product from bean cake by 80% alcohol solution and 2.5xl0~3mol/L NaOH solution are 2.65% and 1.24% respectively.2.Semifmished product of solved in pH6.5 solution is extracted by ethyl acetate to extract two times and the content of isoflavone in extracted product is 127.70mg/g.3.The isoflavones in semifinished product of solved in pH10.2 solution of sodium hydroxide are exchanged on the negative ion exchange column and their are eluted by 2.4xlO~2 HCI solution obtained isoflavones in eluate to be 193.17mg/g and 56.30mg/g.4> The abilities of clearing hydroxide free radical on the soy isoflavone, hesperidin,quercetin,morin and vitamine C are compared. The effect of clearing hydroxide free radical of soy isoflavone is best at certain concentration.5> Results of determination of soy isoflavone and hydroxide free radical by resonance light scattering and fluorescence method are satisfactory.
