The glorious Chinese cuisine history undergoes the unceasing practice of accumulation and creation, forming a unique Chinese food culture. But the Chinese cooking technology inheritance takes the main form of the master worker teaching their apprentices and impartation within the family, which affects the development of the cuisine industry.Along with the improvement of people's material living standards, people's dietary mode has changed. The social need of talented people is growing and the requirement of talented person's quality is on the increase. The society especially needs the special talented people who both understand the diet nutrition and could cook scientifically. Therefore, the traditional form of the master worker teaching their apprentices would not satisfy the social needs.Cuisine is an applied subject which takes practice as their foundation. Although with a glorious history, the school education which trains professional chefs starts late. Heilongjiang Business School and Shanghai Institute of Finance and Economics once successively established the cooking subject and enrolled a session of student in 1959, which was the initiative stage of Chinese higher education of cuisine. At present, the cooking and nutrition education subject established the undergraduate education mainly in eight provinces: Heilongjiang, Beijing, Hebei, Shandong, Anhui, Jiangsu, Hubei, Guangdong, playing an influential role for inheriting the tradition food culture and adding glory to the Chinese diet civilization. Comparing with other subjects, the cooking subject's undergraduate education only has about 20 years history, which is at the exploration stage.Basing on the cooking theoretical teaching foundation, the pattern of cooking subject's undergraduate education in our country is to strengthen the implementation of Practice Teaching which takes the cooking skill operations primarily, unify the theory and the practice, study for the purpose of application. The cooking practice teaching is a effective training way to train the students'actual operation ability, enhance innovation ability, promote the student to adapt the job requirement comprehensively in the future. The practice teaching relates to the formation of students'operation skill platform, which will be the initiative capacity cornerstone of the students'employment practical ability, professional ability and innovation ability in the future. In the personal training process of cooking and nutrition education subject, school of Tourism of University of Jinan reforms the cooking practice teaching, explores an effective training way positively to train the student actual operation ability, enhances the innovation ability and promote the student to adapt the job requirement comprehensively. This article mainly utilizes the questionnaire method to the students of the cooking and the nutrition education subject in school of Tourism of University of Jinan, collecting and organizing the related information in the practice teaching to analyze and research.This article summarized the practice of the teaching characteristics of University of Jinan. The practice teaching characteristics includes the emphasis on ability, the great attention to the details, the optimization of teaching process, the adherence to the practice. Focusing on the practical teaching process, this article puts forth several suggestions as followed: Inside the university, enhancing the construction of experimented equipment by financing; developing the"bi-teachers"and improving the Educational background, using right teaching method and changing teaching content, Filtering the vaiety and desiging reasonable teaching hour, enhancing the specialty education and increasing the direction of study method.Outside the university, establish the steady practical base, changing practical post enhancing the monitor and control of practical sector, making the evaluation of practical teaching, setting practical courses reasongably, increasing the innovation ability of the student.In summary, school of tourism university of Jinan has made the practical teaching reform beneficial to both the students and the teachers a lot. However, the education of cooking in the university has just started. It is a systematic engineering to enhance the students' professional skills and to develop the ability of creation. So, the practical teaching of cooking needs improving and bettering continuously, and it also needs exploring and attempting unceasingly in order to train the talented people of high quality well that can meet the needs of social development. There is before the higher education of cuisine a heavy responsibility and a long way to go.
