The fattening pigs were allotted randomly to five groups, there were six pigs in each group, the average weight was 60kg. The size, sex, health and genetic character acted accordantly. The accession of safflower oil was divided into four levels(0. 4%, 0. 6%. 0. 8%, 1). The aim of the experiment is to study the growing pigs' production performance, dressing performance^ meat quality and the contents of cholesterol. The results were as follows:As the different proportion of the safflower oil in each testing group, the day weight of growing pigs all significantly increased (p<0.05). From the results of carcass quality, we saw a marked increase in group 3(0.8%). The dressing percentage did not improve (p>0.05) ;The ratios of muscle in group 1,2,3,4 respectively increased 11.60%(p<0.05), 13. 68(p<0.01), 21.01%(P<0.01) and 8. 47%(P<0.01) over the control group. The average back thickness decreased gradually from group 1 to 4, the decreases were not markedly, but in group 4 and the control group was markedly (p<0.05). The eye muscle areas of group 1,2,3,4 respectively increased 10. 5%(p<0.01), 18.85(p<0. 01), 20.96%(p<0.01) and 12.40(p<0.01). Meat color and muscle marbling improved, and they were in normal state. Furthermore, the contents of essential amino acid increased, the distributing of fatty acid improved, so they all increased the nutritional value of the meat. The contents of cholesterol reduced significantly in the testing groups (group 2 and 3: p<0.01, group 1:p<0.05).
