Food quality and safety must be considered in the process of the material production, machiing, stock, transportation, maketing and so on.Food quality and safety is like the system project. The food quality and safety in processing is the Premise and Foundation of entering the market. Standard System of the quality and safety in food processing,processing circumstance condition and facility,processing technology and management method are the guarantee of food quality and safety.Soybean products is good for health,and also one of the most important foods for Chinese people. The problems on soybean products' quality and safety can be seen in media many times,it represents the food quality and safety's problems. There are invisible dangers in soybean processing from prepareing materials, processing circumstance, facility,processing technology,pecking,stock, transportation to sales. So solving soybean's quality and safety is key to food quality and safety.This thesis is based on the review and conclusion about the world food quality and safety,take the situation in yancheng city for example,analyze soybean products quality and safety there and the reasons, Aimed at studying food processing quality and safty mangement Standard System and management technology,at last this thesis give the suggestion.
