As the distributing center of salt industry in Huai He River basin, Yang Zhou remains as thecenter of richness and celebrity by the end of Qing Dynesty. Therefore Yang Zhou tea house wasendowed with distinguishing local features. From the form of operation, the old Yang Zhou tea househas a closed relation with daily life.The scope of operation also varies from hun-teahaouse、qing-teahouse And the modern tea house emphasize on the tea itself.The old tea house played an important role of resting lougue, caterer and dissension solving place,while the modern tea house functions as a location for traditional tea drinking, business talk as well asentertainment house.Yang Zhou tea house has an inseparable relation with Yangzhou traditional culture, especially withthe local food culture.They also strongly promote the development of local tea industry.Through the research, the author indicate the develop strategy of Yangzhou tea house as follows.1) Renew the traditional performance in tea house, promote the culture exchange and turn themodern tea house into a window of local culture communication.2) Introduce new form of operation in modern tea house, form a harmonious pattern of ancient teaand modern coffee and acclimatize themselves to the modern life pace and taste.3) Inherit and develop the relation between Yang Zhou food and tea, and endow the tea house withricher local characteristic.4) Emphasize on the research of the quintessence of ’tea’ and the feature of ’house’.
