Zanthoxylum bungeanum belongs to Rutaceae family. It is a traditionally medicinal and edible material in China. Polyphenols are rich in alkaloids, although the research on that was less at home and abroad. In this paper, extraction, purification and activity of polyphenols from Zanthoxylum bungeanum have been studied. The main contents were as follows:(1) Effects of different solvents on the polyphenols yield of Zanthoxylum bungeanum were studied. The results showed that the appropriate extraction solvent was ethanol. The single factor experiment and orthogonal experiment method were adopted to optimize the extraction technology of polyphenols from Zanthoxylum bungeanum. The results showed that the optimal extraction conditions of polyphenols were determined to be:extraction temperature60℃,solid to liquid ratio1:20g/mL, ethanol concentration60%, and extraction time1.5h. Under these conditions, the extraction yield of polyphenols was6.34%.(2) Through the static adsorption and desorption experiments, NKA-9resin was selected from6kinds of macroporous resins as a suitable material to purify the polyhenols from Zanthoxylum bungeanum. And then the properties of adsorption and desorption of the resin were studied. The results showed NKA-9macroporous resin showed the best effect of purification. The purification conditions are as follows:sample concent1.690mg/mL, sample pH4, the eluting rate1.5mL/min, the column is washed with distilled water and eluted with about4BV of30%ethanol. Under these conditions, the polyphenols content increased from30.94%to79.58%, the yield rate raised2.57times.(3) The scavenging activity of the polyphenols purified was studied by three radical systems such as1,1-diphenly-2-picrly-hydrazyl free radical, superoxide anion free radical and hydroxide free radical, and total reducing test of the polyphenols purified from Zanthoxylum bungeanum were studied. The results showed that the polyphenols purified from Zanthoxylum bungeanum had good free radical and antioxidant effect.
