Jerusalem Artichoke(JA) is a perennial Asteraceae with high yield andadaptability. JA is rich in flavonoids and inulin,which mainly used in medicine, foodand other industries. In this study, ethanol reflux extraction of JA extract method.Tostudy the active substances in crude extract effect on AA broiler productionperformance, meat quality and immune function,which has important practicalsignificance to the full development and utilization of Jerusalem artichoke.JA was crushed by extracted with70%ethanol, measured ingredient withspectrophotometer. The results for the crude extract of the extraction rate of25.93%,which contains inulin and flavonoids were80.62%and3.12%. The broilers of3601dAA were randomly divided into four groups (n=6), each repeated15. Group I (controlgroup) were fed a basal diet, and group II, III, IV were fed in0.2%,0.4%,0.8%crudeJerusalem artichoke extraction fed42d. Performance, meat quality and immunefunction were determined.The average daily gain of group II, III than the control group were significantlydifferent (P<0.05), and no significant difference (P>0.05) among other groups. Theaverage daily feed intake was no significantly difference (P>0.05) in each group. Thefeed conversion ratio group III than the control group was significant difference(P<0.05), and no significant difference (P>0.05) among other groups. The half net borerate of group II, Ⅲ than the control group was significant difference (P<0.05), and nosignificant difference (P>0.05) among other groups. The full net bore rate of group Ⅲthan the control group was significant differences (P<0.05), and no significantdifference (P>0.05) among other groups. The pectoral muscle rate of group Ⅲ thanthe control group was significant differences (P<0.05), and no significant difference(P>0.05) among other groups. The leg muscle rate no significant difference (P>0.05)among the groups. The pectoral muscle department hydro compared of group Ⅲ thanthe control group was difference significant (P<0.05), and no significant difference (P>0.05) among other groups. The pectoral muscle water content of group Ⅲ than thecontrol group was significant differences (P<0.05), and no significant difference(P>0.05) among other groups. The pectoral muscle drip loss of group ⅲ than thecontrol group was significant differences (P<0.05), and no significant difference(P>0.05) among other groups. The pH of pectoral muscle no significant difference(P>0.05) among the groups. The leg muscle water holding capacity of group Ⅲ thanthe control group showed a significant (P<0.05), and no significant difference (P>0.05)among other groups. The leg muscle water content of group Ⅲ than the control groupsignificantly different (P<0.05), and no significant difference (P>0.05) among othergroups. The leg muscle drip loss of group ⅲ than the control group was significantdifferences (P<0.05), and no significant difference (P>0.05) among other groups. ThepH of leg muscle was no significant difference (P>0.05) among the groups. The bursalindex was no significant difference (P>0.05) among the groups. The thymus index ofeach experimental group than the control group were significantly increased (P<0.05).The spleen index of group III, IV significant difference compared with the controlgroup (P<0.05), and no significant difference (P>0.05) among other groups.The study showed that JA extraction can improve AA broiler performance, meatquality and immune function, integrated indicators. Group III was best, add0.4%ofthe JA extraction in the present study.
