The three new lines of high-quality broilers (BH, BH1, BH2), as materials, were cultivated in this test, the use of semi-closed and open rearing methods to feed, measuring the growth and development and slaughtering and meat quality performance, analyze the differences between the different rearing system and strains and sexes, provide a reference for quality chicken breeding and production. The main results are as follows:The performance of growth and development test showed that:the performance of strains’growth and development are significant difference in strains, the advantage of BH strain is much better than the BH1and BH2strains, the time of BH strain reached market weight at the time of75days, while the BH1and BH2strains at the time of90days. Semi-closed and open breeding, The75days’BH strain can all reach market weight requirements, while the BH1and BH2strains are significant differences, the growth rate of feeding90-day-old’s BH2strain is faster than the BH1strain, the cock’s performance of the growth rate under conditions of semi-enclosed is obvious better than open feeding. Compared with the semi-enclosed feeding, the feed conversion ratio of open rearing conditions is higher in the first4-8weeks;compared with the cock, the BH2hens’feed conversion ratio of two rearing methods are higher.Slaughtering performance measurement results show that:the similar market weight slaughter, the slaughtering performance of BH2strain under semi-closed feeding was better than BH strain and BH1strain, the slaughtering performance of open feeding BH chicken was lower, but the BH2chicken was slightly better than BH1chicken. The same time slaughtering, the slaughtering performance of semi-enclosed breeding BH chicken was significantly better than the BH1chicken and BH2chicken, the slaughtering performance of open rearing BH chicken was lower, while the BH2chicken was slightly better than the BH1chicken. Semi-enclosed feeding BH chicken’s90-day-old slaughtering performance was significantly better than the75days of age, the smaller difference in open rearing.Succulent performance measurement results show that:flesh-colored is mainly affected by gender impact, muscle pH is mainly influenced by the rearing methods. Rooster red and luminance values are higher, yellowness is lower. Open-rearing can increase muscle red value, reduce the brightness values and yellowness, improve muscle pH value. The crude protein content is mainly affected by the rearing system and breeding time, moisture content and dry matter content is mainly affected by the strains and feeding time and rearing system, open-feeding is conducive to an increase in crude protein content. Intramuscular fat content of hen was significantly higher than cock, semi-enclosed diet group intramuscular fat content is higher than the open feeding; keeping with the feeding time can increase the intramuscular fat content; intramuscular fat content differences is smaller between strains, open-feeding will help to improve the content of intramuscular fat. The cock’s inosine monophosphate content is higher than the hen’s, open rearing inosine acid content is higher than the semi-enclosed feeding. The strains and feeding time are the major factors affecting muscle delicious amino acids content, gender factors main affect the glycine content of delicious amino acids,the cock’s glycine content is higher. Theopen feeding is use of reducing muscle fiber diameter, and increasing the density of muscle fiber; extending the feeding time can increase muscle fiber diameter, decrease the muscle fiber density of semi-closed feeding, meanwhile increasing the muscle fiber density of open feeding.In short, the production performance of high-quality broilers is significantly differences between different rearing methods, semi-enclosed feeding will be use of improving the growth performance of the high-quality broilers, open feeding can significantly improve the meat quality, especially in favor of increasing the content of the muscle flavor compounds. The comprehensive utilization of extending keeping time properly and open-breeding etc. measures can significantly improve muscle characteristics, improve the muscles quality, producing high-quality high-quality chicken.
