ABSTRACT:In recent years, with the rapid development of our country’s economy and society, the significant adjustment of agricultural structure, and the improvement of people’s living standard, consumption of fresh products such as aquatic products scale is growing rapidly, and people put forward higher request on aquatic products’ diversification, nutrition and freshness,"Multi variety, small batch, highly fresh" has becomes the main characteristics of aquatic products cold chain logistics. Compared with the developed countries, our country’s cold chain logistics’infrastructure is inadequate, the proportion of cold chain circulation is low, cold chain logistics cost is high, the technical level of the cold chain logistics is behind and industry standard and system is not sound, and these restrict the long-term development of aquatic products cold chain logistics in China seriously.In this paper, based on the idea of lean value stream to analyze and explore the development of aquatic products cold chain logistics. This Paper focus on the use of the method of process flow and value flow analysis method to analyze and research the aquatic products cold chain logistics’cold chain flow and value flow deeply, conclude the wastes in aquatic products cold chain logistics, optimize and improve the value flow of aquatic products cold chain logistics from the four aspects of production management, inventory management, transportation and distribution management, quality management. At the same time, this paper also uses the analysis tools of value flow-value stream mapping to study the frozen cod fillet processing production of cold chain processing enterprises A through a empirical case study, then draw the value stream map of the present status and the future state, and put forward the corresponding optimization and improvement measures.This paper centers on the idea of value stream of eliminate waste, reduce costs, create value, continuous improvement", builds up a high efficiency, safety, and lean of the aquatic products cold chain logistics system in combination with the characteristics of the aquatic products cold chain logistics, and puts forward measures and suggestions on the development of lean aquatic products cold chain logistics.
