Pork is the main source of meat protein for Chinese residents, and it is of strategic importance to ensure pork supply. This paper based on a lot of literature and information. We can draw the conclusion by analysis of Nanjing population, the mean consumption of everyone and the total consumption of pork and production form large amounts of data from the Statistical Yearbook. First, Nanjing’s economy continues to grow, population is increasing. Due to the increased population, the pork consumption continued to grow. Second, due to the development of the city, people is eager to a friendly environment. Because of the relocation of the pig breeding industry, Nanjing pork reduced supply. Third, both the rural and urban residents per capita pork consumption were higher than the national average. Nanjing urban residents per capita pork consumption is higher than rural residents, but rural residents per capita pork consumption grew faster than urban residents. Nanjing residents’per capita pork consumption is showing a "rigid" characteristics, that is, the smaller the impact on prices. Low income elasticity of demand of pork, means that pork consumption by residents revenue impact is small. Fifth, pork consumption has gradually increased, the increase in total consumption is mainly due to the increase in the total population; local pork production decreased, while the increase in total demand, resulting in total consumption gap increasing, and this gap is gradually widening. Nanjing local pork production decline is due to the relocation caused by the pig breeding industry. These conclusions, in order to ensure pork supply, stable pork market in Nanjing, the paper considers the information network should be established pork production and consumption, the timely release of information to guide production; to ensure that the number of sows, increasing the public foundation of pig farming inputs and the establishment of efficient feed production systems; guide the consumption of pork grading and control a variety of pig epidemic to ensure the safety of pork into the market.
