With the improvement of income, pork consumption demand in our country is continually creasing. To meet the growing demand, pork supply has been in a rising trend. At the same time, there are also some problems. Pork quality safety problems have frequented in recent years and lager pork supply and price fluctuation have affected the pork market supply and demand balance. Therefore, stable supply and good quality safety system have an important significance for meeting the consumers’ stable demand and ensuring consumers’ rights and interests.In a market economy, consumer demand plays a leading role on market supply and demand. Analyzing the pork consumption behavior of consumers from the view of micro is very important to understand the pork market supply and demand. This study analyzed the household quantity and quality demand behavior on pork in urban China, on the basis of the micro investigation data of the10sample cities and2027sample households.The empirical results indicated that income, consumer preferences, pork price and degree of processing significantly influence the urban consumers’pork demand in different level. Pork consumption rises with the increase of residents’ income, and the rising speed slowed down with the increasing income; quality demand rises as income rises, and the demand is different by different income level. So it’s very important to supply different quality level pork for different consumers’ quality demand level. Pork price has significant effect on pork quantity demand. However, consumers’ pork demand is rigid, stabilizing pork supply and price fluctuation is vital. In addition, intensifying the supervision of pork quality and safety and disclosing information on food quality and safety to the market allow no delay.
