Oolong Tea has been the traditional drink. The province of Fujian is her mainplace of production, Fujian Oolong Tea has earned the reputation by her uniquequality both at home and abroad.ISI22000:2005applies to all organizations in the food chain, is worldwiderecognized as the most effective way to control the food safety. it can also be used asthe international standard for review and accreditation of the food safety managementsystem. At present, there has been no reports on how ISO222000to be used in the teaindustry. Based on the collective information and analysis, this article proposed to setup the ISO22000model for the Fujian Oolong Tea manufacturer (Examples: WuyiRock Tea, Tieguanyin Tea), to set up the critical limit and develope the plans of bothOPRP and HACCP by a completed analysis of the potential hazard of Wuyi Rock Teaand Tieguanyin Tea during the manufacture, to set up PRP by both special technologycriterion and hygienic standard from tea manufacturer. Therefore, the food safetyhazard can be lowered down to an acceptable line by PRP, OPRP and HACCP. Thisarticle tried to explain the process how The third Party accreditation reviews andverifies the effectiveness of ISO22000system and underlined how important TheThird Party accreditation promotes and strengthens the ISO22000food safetymanagement system.The previous research indicated that the introduction of ISO22000promoted theemployee’s professional growth and the manufacturer’s quality safety management.This article aims to provide the tea manufacturer the working model as well as moreunderstanding regarding ISO22000’s criterion and accreditation. It would also bewonderful to contribute the input for further research on the uses of ISO20000duringthe manufacture of Oolong Tea.
