Rice wine has a long history, known as China’s "national drink". Compared with beer, samshu and wine, rice wine brewing and production process is still a continuation of the traditional brewing process, workshop-level scale and manual operation production methods resulted the quality of rice wine is difficult to control, which seriously hindered the development of rice wine industry. This paper combined the facing food safety situation for the moment with production status of rice wine industry, regard SSJ rice wine production process as the research object, from quality and safety two aspects, research the key technologies of quality and safety control in SSJ rice wine production process.The main research contents are followed:1. Fusing together ISO22000:2005 and ISO9001:2008 two systems, building a quality and safety control system of SSJ rice wine production, including the quality safety control principles, control system of double PDCA cycle and the quality and safety control system planning.2. Using FMEA method to analyze the SSJ rice wine production process and to determine the critical control points, Because FMEA evaluation of SOD has non-quantitative limitations, used fuzzy sets and gray control theory to improve it; the improved FMEA method is applied to the production process of SSJ rice wine, computed each link of positive benchmark correlation Ri+, negative benchmark correlation Ri- and its risk priority Ci, through the comprehensive comparison of the three sorting determine the quality and safety control of key points in the process of production, then make corresponding HACCP plan.3. To study the temperature control technology of primary fermentation,I design a fuzzy control algorithm based on RBF, which can predict a quality model of primary fermentation. For the measurable factors influence SSJ rice wine primary fermentation quality, I design a SSJ rice wine fermentation quality prediction model based on RBF; based on the characteristics of primary fermentation process to design a temperature fuzzy control system of primary fermentation temperature control, using the SIMULINK in MATLAB to simulation system, and comparing with conventional PID temperature control simulation; because of the limitations of a conventional fuzzy system is susceptible to interference by the external environment, when the primary fermentation quality prediction value is abnormal, the abnormal value can transform into a fuzzy correction factor by a linear formula, when fuzzy correction factors of fuzzy control rules are adjusted, the fuzzy control system can achieve better control effect.4. Combined with practical case, designing SSJ rice wine quality safety control system based on DCS.Combined with the production process of SSJ rice wine, designing SSJ rice wine online-quality control of the DCS network structure (including the enterprise management level and control management level, the procescontrol level and network systems), and the quality control points at all levels; Secondly, focus on the primary fermentation temperature control process, make SSJ rice Wine fermentation process under online temperature control based on DCS, to improve the automation level of SSJ rice Wine production, implement online rice Wine quality control, guide the actual production process, has the reality guiding significance.
