In this experiment choose green tea, cordyceps militaris and glossy ganoderma adding some additive and stabilizer by extracting, to make both mellow taste and rich health effects of compound beverage. The research of cordyceps militaris products is seldom, but its nutrient content and flavor worth studying. This experiment mainly study for extraction process of cordyceps militaris and glossy ganoderma tea drink, optimization of additive and stabilizer and oxidation resistance of its beverage products.The main research contents and conclusions are as follows:The optimum extraction conditions of green tea is tea ratio of 1:50, at a temperature of 60 ℃extraction 30min and repeated three times, cordyceps militaris and glossy ganoderma optimum extraction conditions are material to water ratio of 1:15, at a temperature of 90 ℃ of extraction 1.5h.The optimal formula conditions of cordyceps militaris and glossy ganoderma tea drink are determined. Orthogonal method is choosed for determining the best matching condition for cordyceps militaris and glossy ganoderma tea drink. The content of green tea is 50mL and the content of the mixture of extracts of cordyceps militaris and extracts of glossy ganoderma is 4mL.The optimal formula conditions of the amount of additive of cordyceps militaris and glossy ganoderma tea drink are determined. Orthogonal method is choosed for determining the best matching condition for the amount of additive of cordyceps militaris and glossy ganoderma tea drink. The content of mixture is 60mL, honey is 3mL, Xylitol is 9g, Anti-iso-ascorbic sodium is 0.30g and citric acid is 0.25g.The optimal formula conditions of the amount of stabilizer of cordyceps militaris and glossy ganoderma tea drink are determined. Response surface method is choosed for determining the best matching condition for cordyceps militaris and glossy ganoderma tea drink by its reference standard. The content of mixture is 60mL, honey is 3mL, Xylitol is 9g, Anti-iso-ascorbic sodium is 0.3g, citric acid is 0.25g, Xanthan gum is 0.02g, CMC-Na is 0.3g and pectin is 0.15g.The finished beverages measured by spectrophotometry at 514nm and 734nm by calculating. DPPH inhibition rate of cordyceps militaris and glossy ganoderma tea drink is 50.30%. ABTS clearance rate of cordyceps militaris and glossy ganoderma tea drink is 90.73%. We can get conclusion that this beverage has a good oxidation resistance.
