This study was conducted to determine the black fungus commodity character, polysaccharides characteristics and their correlation study. Production and utilization of black fungus mushrooms have enormously increased in China as Black fungus nutrient-rich, crisp taste, loved by the every age of people. Six varieties of Black fungus were collected from different places of China (Hubei, Hebei, Gansu black, Zhejiang, Jilin, Sichuan) because black fungus growing widely in china, varieties combined with the climatic condition and growing areas thus effect the material during industrial processing of the products. Main finding of this research are:1. Gansu black fungus was found to be yellow color, ear piece thin and soft taste rotten easily, as contrast to Hubei and Zhejiang, demonstrate black color, flesh, crisp and refreshing. Six black fungus commodity character differences.2. Comprehensive evaluation explain that Hubei black fungus appearance, nutritional and sensory quality are excellent while Gansu black fungus appearance and sensory quality low, except better nutrition quality, where as Zhejiang black fungus appearance, sensory better in quality, though lower nutritional quality; Jilin, Hebei, Sichuan black fungus appearance, nutritional and sensorial quality ordinary.3. Black fungus goods traits correlation analysis showed that the color of the black fungus is the main factor of the consumers in the purchase or not it refreshing consumers an important basis for evaluation, soluble polysaccharide content of the black fungus flexibility was significantly negative related, the correlation coefficient is 0.87143, protein content and black fungus the hardness was a significant positive relationship, the correlation coefficient is 0.81164; The texture was examined by instruments (textural analyzer) people’s sense here are differences, chewing elastic bond with the people of the defined parameters of the instrument was significantly negatively related to bond parameter that reflects the flexibility of black fungus.4. In contrat six black fungus polysaccharides yield. Hubei black fungus polysaccharides yield a minimum of 14.08%, because of the dissolution of the polysaccharide cell wall structure is directly related to mechanical agitation and high temperature resistance, Hubei black fungus cell wall, which may be its hardness, adhesiveness and chewable. Impurity content of polysaccharide can reach more than 90%, Zhejiang, Hubei and Hebei in the black fungus polysaccharides easier to remove impurities compared to the other three, this may be related to the complexity of the composition and structure of the polysaccharide.5. Study further examination illustrate the six refined black fungus polysaccharides purified protein and nucleic acid-free, six black fungus polysaccharides IR spectra consistent pyranose sugars are uronic acid. Gas chromatography showed that the six black fungus monosaccharide composition and proportions of the same six black fungus polysaccharides significant structural differences, whether this be the cause for six black fungus taste differentiation.6. Study further show that polysaccharide solubility results same with black fungus rehydration, Hubei black fungus rehydration, the mainly soluble polysaccharide, where Jilin and Gansu black fungus insoluble polysaccharide.
