Niujie Hui nationality agglomeration, as the most influential Hui nationality agglomeration in Beijing, has been deconstructed and reconstructed under the joint motivation of the planned economy after the foundation of Republic of China, the commodity economy after the Reform and Openning up, and the urban expansion. At present, the culture and economy in a community are promoted mutually, which are increasingly opening up. The formation of a community has to go through a process, as well as the means of livelihood and the commercial activities in the community. The research on historic dimension of communities is an important research perspective. Through the temporal and spatial changes of the halal food industry in the Niujie Hui nationality agglomeration, the author tries to reveal the impacts of modernization, urbanization and the social transformation on the halal food industry and the economic life of the community residents, and to investigate the factors that jointly lead to the changes.The nature of the history, the coexistence, coordination, adaptation and conflicts among space, society and culture of a community can be captured through the practical case study of the development of Niujie halal food industry. Through this research, we can have a clear analysis and understanding of the adaptation of the traditional ethnic economy to the modern factors in order to find out ways to coordinate with the modernization and the social reform. At the same time, we can have a further understanding of the symbiotic relationship between ethnic culture and ethnic economy, and provide references for the history and culture protection accompanied by the commercial development.This paper can be divided into five chapters.Chapter one is the introduction. The reason of this topic, research status, research methodology, difficulties and innovation are discussed in this chapter.Chapter two is the cultural habit of halal food in Niujie. The author discusses the definition of halal food and the diet custom in Niujie after reviewing the history and evolution of the Niujie Hui nationality agglomeration so that an overall picture of the diet culture in Niujie can be presented.Chapter three is the research on the history of the Niujie halal food industry. First, several development phrases in the history are reviewed, including the periods before and after the foundation of the Republic of China, the period after the Reform and Opening up. Second, the author gives detailed descriptions of some cases that the halal restaurants in Beijing ran by some Niujie residents. In the statement, the traditional halal dishes, the restaurant staff, shops and distribution are collected based on the folks’ memories. At last, the author makes comparison of the commercial structures of the halal food industry before and after the large-scale city reform from the90s century to the beginning of this new century.Chapter four is the present status of the Niujie halal food industry. With the statistic survey, the scale of the present Niujie halal food industry is showed intuitively. Comments on the representative companies and individual units are gotten both from the perspectives of managers and customers. The author also gives detailed introduction of the "Gourmet Festival of Halal Food" held in Niujie promoted by multi parties.Chapter five analyzes the changes and influencing factors of the Niujie halal food industry. The author reviews and summarizes the status and features in every stage of the Niujie halal food industry, then the author cardings the various factors that have effects on its evolution process.The social structure of the Niujie Hui nationality agglomeration has changed a lot. With the deep penetration of the market economy, the combination of the traditional cultural and the modern building style allow people to try new imagination and take practice. The cultural and economic attractions are breaking through the original community boundary. Through the research on the evolution process of the Niujin halal food industry, the author finds that the development change is the joint effect of various factors, among which the foundation of the nation, society, ethnic policy are playing indispensable roles, or even the fundamental factor of influencing the halal industry development. Besides, culture, the interaction between culture and economy, as well as the reconstruction of city caused by capital all have effects on the economic life style and the ethnic business of the group of ethnic minority in this district.
