With the development of economy, the competition betweenenterprises is also developing. Instead of the condition that competing justexists between enterprises and industries, but now it has developed intosupply chain competition of cross-enterprise, cross-industry and eventransnational. Under this background, so the research on aquatic productssupply chain becomes increasingly hot. The consumption of aquaticproduct in Shanghai is so huge, but its aquatic products processing lags farbehind China’s average level. So, it’s significant to do the research forShanghai aquatic supply chain; then, it will be more practically significantfor the study which treating the aquatic processor as the core enterprise ofsupply chain.Firstly, this article analyzes the optimization method and riskmanagement of aquatic products supply chain respectively from the homeand abroad perspective. Later, it comes to the conclusion that now there isvery few researches taking the risk level into account. Then, the study isabout the status quo of the aquatic products supply chain in Shanghai;meanwhile, emphasizes the fact that Shanghai’s aquatic products processoris far behind the national average level. Based on this, this paper proposesthe aquatic processor as the core of supply chain, quoting the theory ofConditional Value-at-Risk, and then respectively to measure the risk levelof the supply and distribution networks. On the basis, this paperrespectively builds optimization models and innovatively reviewingreducing the risk loss as one goal, such as a two-step-optimization-modelconcerning the supply net risks and a multiple-target-optimization-model concerning the distribution net risks. Taking a professional processing ofaquatic products in Shanghai for example, firstly plug the investigativerelevant data into the models; secondly, obtain one decision scheme aboutsupply selection&purchased quantity from each supply and one otherdecision scheme about selection of distribution spot&purchased quantityof each demand point.This paper indicate that: the use of Conditional Value-at-Risk in thesupply chain optimization or design is innovative and practical, and canprovide a more effective decision-making solution for the core enterprise ofsupply chain; for study of supply network, under the condition of givenattitude to the risk of the core enterprise, we can get the decision schemewhich concerning minimizing both the supply risk revel and expected cost;in addition, it shows that the preference degree on risk of the coreenterprise can influence the value or level of Conditional Value-at-Risk andthen will affect the decision scheme about supply selection&purchasedquantity; for the study of distribution network, the core processing canrealize multiple targets, that is large income, low Conditional Value-at-Risklevel and customer satisfaction; and, the difference of attention on thesethree targets would influence the comprehensive target and then affect thefinal distribution selection and the purchased quantity of each demand.This article not only enriches the theory of supply chain and riskmanagement, so that provides a new direction for the supply chainoptimization of aquatic products under the risk perspective, but also offerthe basis and methods to reduce the cost, decrease the damage from risksand increase the customer satisfaction of the aquatic processor in Shanghai.
