With the further deepening of Chinese reform and opening up, the problem of overcapacity caused by infrastructure investment is increasingly grim. Chinese economy is at an important period of strategic opportunities, showing a new normal. Optimizing the economic structure is imminent. Development of the third industry will become an important means of restructuring development. The catering industry is not only an important component of Chinese third industry, but also bear the stimulating employment, promote social harmony, stimulate agricultural development, promote the important responsibility of the Chinese traditional culture and other aspects. So achieving the restaurant industry to sound and rapid development is of great significance. Especially the catering industry of minority areas tend to lag behind, and we have to face fierce competition with developed regions and foreign companies, How to develop minority areas’ s catering industry in this highly competitive environment that requires a combination of Minority Areas’ s situation, then in-depth analysis to identify the key issues in order to get a conclusion.In this paper, taking Dali as an example, through querying the Dali historical documents, proposing Dali Catering has three unique core characteristics : deeply rooted in history, ecologically rich, distinctive ethnic characteristics. Proposed Dali has the great potential of "going out". On the basis of fieldwork, I research the status of Dali catering industry in-depth analysis. Dali catering industry under the support policies of government has made the industry expanded rapidly in recent nine years. Catering industry gathering has begun to take shape, mainly in the administrative, commercial, coastal zones, residential areas and tourist areas. Dining species are also increasingly rich. But hidden behind the catering industry achievements, there are still five main issues that need improvement. Development environment to be optimized, lack of financing, poor market environment, government accountability system confusing. Brand building behind, did not take full advantage of the three core characteristics. The low chain of control, lack of an upstream influence of the leading enterprises, the existing supply chain inefficiencies. Enterprises small, mostly small and medium micro enterprises. Employment problems, staff mobility, unable to retain key personnel. Finally, in this paper, based on the analysis of the problem, proposed development path of catering of Dali, to enrich the relevant theoretical results.
