Research On Collaboration Mode Of Catering Supply Chain Based On Supply-hub

With the continuous improvement of residents’income and living level, the scale of the catering market is gradually expanding, which not only increases the opportunities of the catering industry, but also the market competition, and competition has been changed from among enterprises to among supply chains. There are many different kinds of dishes in catering industry, and one dish often consists of multiple ingredients supplied by different vendors; the perishable of ingredients have higher requirements for the conditions of transport, processing, storage; the demand of final consumer is changeable. These make the cooperative operation of the catering supply chain is very complex, and propose severe challenge for the response speed.Supply-hub is a kind of collaborative operation mode developed in the practice of manufacturing enterprises. It can solve the problem of the cooperative operation of the assembly type supply chain. Through the research of Supply-hub operation model, the operation characteristics of the catering supply chain, found that the Supply-hub model can be applied to the catering industry, to solve the sufficient of the catering supply chain management, to improve the operating efficiency of the catering supply chain. Firstly, this paper analyzes the operation characteristics and existing problems of the catering supply chain, and the needs of the collaborative process, including vertical and horizontal coordination. Secondly, analyzes the feasibility of applying Supply-hub model to catering supply chain and the main body of Hub operation, and constructs collaborative operation mode of catering supply chain based on Supply-hub with catering supply chain integrator as operation main body, and analyze its operational mechanism, characteristics and influencing factors. Finally, analyzes the operation cost of the catering supply chain, and constructs two catering supply chain collaborative decision-making models:the decentralized decision model of vendor and Supply-hub operators without considering supplier’s horizontal coordination, the integrated decision model of Supply-hub operator considering that, a numerical example is given to analyze the latter model is better.In this paper, the Supply-Hub model is applied to the catering supply chain, which enriches the theoretical research, and provides theoretical support for the practice.
