Since the "melamine " incident was reported, the public lay great emphasis on China’s dairy products, especially infant milk powder, and safety attention. Dairy safety incidents like "estrogen in milk powder", "children with big heads" break out frequently. Dairy industry attracts more and more attention and meanwhile leads related scholars to do research on quality and safety monitoring of dairy, risk assessment and control mechanisms.The development of networking technology brought hope to solve the problem of the quality and safety of dairy products. Using the Internet of things technology to the quality and safety management of dairy products industry, the whole process management of industry information can be realized.. Tracing to the source of information of dairy products will greatly solve management problems caused by information asymmetry and effectively eliminate the hidden troubles of dairy products quality and safety, improve the quality and safety of dairy products.The traceability system has a high application value for the operation management of dairy products enterprises and the quality and safety management for dairy products industry. But the system has not been well adopted and used by dairy products enterprises. In order to make the dair y products enterprise managers understand the value of traceability system more clearly, We do this research. The research can aso help the management of the government in the dairy industry to promote the traceability system applications well.In this paper, We analyzes the decision-making behavior of stakeholders in the supply chain of dairy industry supply chain from the perspective of economics. Aiming at the typical problems of the different stages of dairy industry, the game behavior of dairy products industry is explained quantitatively through the establishment of mathematical logic model. We will find out the limitation of the traditional operation management for the dairy products industry, and analyze the inevitability of the operation and management of the dairy industry. According to the results of the analyse, the traceability system of the Internet of things is introduced, and the application of the traceability system in the dairy industry is described in detail. Through the comparison analysis of the behaviour change in dairy industry traceability system before and after, We conclude the application value of traceability system in dairy industry on the management issues.then we use the case study method to demonstrate the analysis of traceability system application value in the dairy industry. Further analysis of the results of the case study, we find a big difference about the value of the traceability system application and the influencing factors for dairy enterprises. Based on the case results analysis, this paper puts forward two theoretical models: Antecedents and Consequences of Traceability System Use in Stage of Raw Milk of Dairy Enterprises;Antecedents and Consequences of Traceability System Use in Stage of Dairy Producet of Dairy Enterprises. Finally, according to the theoretical models, the policy recommendations for the application of the traceability system in the dairy products industry are given.
