Research On Traceability Of Dairy Products Based On Fault Tree Analysis

In 2008,the "Melamine Incident" in our dairy industry has brought the quality and safety of dairy industry into focus.In 2015,China's new food safety law requires to establish a traceability system to ensure food safety,and dairy industry was been regarded as the focus of water testing.At the same time,after the incident of "mad cow disease",developed countries such as the EU,the United States,Japan required that it has to meet the traceability requirements especially for imported foods.It has become imperative for dairy companies to establish a traceability chain and improve its traceability.In recent years,the research on quality safety traceability chain of dairy enterprises is increasing,but most of them considered it in a qualitative way,while there are little research on quantitative aspect.Above this,this paper proceed from the perspective of quantitative research,quantify the traceability of traceability chain through the method of accident tree,to improve the traceability of dairy company and helps them understand it.The main contents of this article are as follows:The first chapter expounds the background,purpose and significance of studying the traceability of dairy products on the basis of consulting the literature,then and summarizes the study of the traceability at home and abroad,and analyzes the current situation of the accident tree.In the second chapter,this paper propose a method of constructing retrospective chain-the hierarchical model method aiming at the dairy enterprises.Try to decompose the retrospective chain construction process into four levels names Traceability links,Traceability processes,Traceability elements and Traceability indicators.Set up a complete traceability chain in a gradual and clear way,and then take the practical application of the W milk product as an example to set up the traceability chain of milk products.In the third chapter,this paper analyzes the traceability of the traceability chain of dairy products through the method of accident tree analysis.Based on the formerly established traceability chain,confirm the key control points and basic events of the traceability of dairy products from the perspective of quality assurance,and using the HACCP theory,so as to establish the accident tree that caused the traceability of retrospective chain,then ascertain the basic events that significantly affect the traceability of the traceability chain through the method of qualitative and quantitative analysis of the tree determine.Finally,this paper give the quantification method of traceability,and propose the improvement suggestions based on the calculation results.In the fourth chapter,based on the traceability chain and fault tree established in previous chapters,a traceability prediction model based on BP neural network is established from the data of dairy production and processing in W enterprises.First,the best traceability prediction model is trained through adjusting network parameters.Then,according to the results of validation analysis,the model can be used to help enterprises understand their traceability and improve their traceability capability.In the fifth chapter,as the core to help enterprises to improve their traceability,a the dairy products quality and safety retrospective management system for W enterprise has been built combined with the quantification method of traceability.It was introduced in turn from the development demand,such as the framework,functions and so on.The sixth chapter summarizes the research contents of the full text and looks forward to the follow-up research work.
