With the improvement of people’s living standard, the demand for fruits and vegetables cold-chain products and requirements for quality of products are gradually increasing. The enterprises operation can be reflected by production management level. Thus, it is necessary for cold chain enterprises to process fruits and vegetables quickly and timely to ensure quality furthest. There are some problems in Chinese cold chain enterprises, such as the small circulating rate, big decay rate and high costs. As the direct site that enterprises can create maximum benefits, production field is the place that including all the production factors, information and all kinds of production problems to be solved. Owing to the feature of high perishability, fruits and vegetables has high circulating time and efficiency. The quality of fruits and vegetables, the cost and profits of enterprises, customer’s satisfaction can be reflected directly by production management level. The goals of enhancing working efficiency and quality of products can be achieved by improving production field, optimizing working method, layout and warehousing, deploying all the production factors.Cold chain enterprise was taken as background in this paper, the process, logistic route, ware housing and working environments of distribution center are researched deeply. Firstly, the evaluation system of cold chain production field was constructed, initial situation of distribution center was evaluated comprehensively, and major problems were obtained. Then analysis and improve its work flow, storage layout and 5S.The basic situation of work process can be obtained by simulating in Anylogic, seek bottle-neck process with the method of line balancing and MOD. Flow route of products can be analysed in circuit diagram, anew logistic routes can be designed with the method of SLP, achieve goals of shorting routes, decreasing logistic volume and making logistic smooth and convenient. Decrease honey comb by changing placement form of products in the matter of storage layout and stacking. Implementing 5S to improve situation of staff, facilities and equipment, environment etc, which are from production field. Lastly, make cost accounting, effect summary and the second comprehensive evaluation for production field after improving. The result of evaluation shows that working efficiency was enhanced availably, circulating rate of product was more faster, working environment becomes more clear, operator’s working become more standard.
