A fast food restaurant called A has been operated in a small community for many years, with a stable source of income and customers. With the cost of operating gradually increased, the profit of the restaurant A is compressed. In the restaurant A’s operating process system, the cost cannot be reduced, and capacity cannot afford a greater amount of business. In this paper, the operation process of restaurant A is the research object, and the method of industrial engineering and the system simulation tool is adopted to analyze the operation process.Firstly this paper introduces the status of the fast food industry at home and abroad, to understand the status and development trend of it. The methods and theories of industrial engineering will be reviewed, including work study, production line balance analysis, ECRS program analysis, system simulation and so on.Secondly, the paper will analyze the status of the restaurant A, including to introduce the post configuration, business process and production line. Using the production line balance theory to analyze the operation flow of restaurant A, and to identify the problems in the production line by using 5W2 H. On the basis of the above analysis, the paper will establish the system model of the operation process of restaurant A by using Arena software, and gives some parameters to carry on the simulation experiment. Through the analysis of the simulation results of the model output, we can find the root of the problems. And the simulation model is verified by comparing with the data of actual system, to identify the true of simulation model.Based on work study, ECRS program analysis, production line balancing, simulation modeling and other industrial engineering research methods, we will find that the restaurant A has space to improve and to develop in the production line balance, process running time, daily output and human resource, and we will take out the business process improvement program. In order to verify the effectiveness of the scheme, the restaurant A is improved by the simulation analysis of the operation process, the improvement of the productivity data before and after the improvement and the evaluation of the improvement scheme.At last, the paper will summarize the theory and application of this article, to point out the shortcomings and limitations of the research, and to provide the reference for the improvement of the operation process in the future.
