In recent years, with the social and economic development, people’s living standard continues to improve, the concept of food consumption changes gradually. The fast food gets more and more people’s attention and favor. "Fuxi" event in 2014 posed the issues of the raw material procurement and Supplier management in the fast-food industry to the forefront and these matters get the public’s attention. Aiming at much potential risks in the fast-food chain, this paper learns vendor evaluation research from the other industries,combines with extension theory, and establishes supplier evaluation model in fast-food industry.The paper expects to provide a theoretical basis and scientific guidance for the healthily developing of the fast-food industry.First of all, the paper expounds the background, significance, summary, contents and methods of the research, and summaries the related concepts and the basic theories in order to provide basis and direction for the latter research.Secondly, for the fast-food industry supply chain uniqueness, the paper comes up with goals and principles of supplier evaluation in fast-food industry. And this paper analyzes relative factors which influence supplier selection. Then establishing supplier evaluation system based on matrix Kraljic in fast-food industry. At last, the paper quantifies and describes each indicator with the purpose of facilitating and collecting the related data.Thirdly, the paper discusses the advantages of using extension theory methods to evaluate supplier in fast-food industry. And using the E-AHP to determine evaluation index-weight, the paper builds a supplier selection model based on the matter-element model and correlation function in the fast-food industry.Finally, combining with the actual empirical research, the paper analyzes M company’s basic conditions and the present situations of the supplier evaluation management. Also, the paper uses the extension evaluation model to choose outstanding suppliers of M company, determines the way of cooperation, and puts forward the strategies of supplier management in M company for ensuring food safety.
