| The study researches the every varieties’ enological characteristics to provide the theoretical basis for varieties popularization and wine making under the climate conditions of Eastern Foot of Helan Mountain Region in 2016,used Cabernet Sauvignon that is main variety in Eastern Foot of Helan Mountain Region as comparison sample,Bei Hong,Dunkelfelder T,Marselan,Petit Verdot,Sangiovese,Tannat,Syrah,Cabernet Franc that are introduced varieties as experimental object.The main results are as follows:1.The Dunkelfelder T and Tannat’s mature periods were from September 17 to September 22,September 22 to September 27,which were about 15~20 days earlier than Cabernet Sauvignon(October 7 to October 12);Cabernet Franc’s mature period was from September 27 to October 2,which is about 10 days earlier than Cabernet Sauvignon;Marselan,Syrah,Bei Hong were from October 2 to October 7,which were about 5 days earlier than Cabernet Sauvignon;Sangiovese’s mature period was same as Cabernet Sauvignon;Petit Verdot matured from October 12 to October 17,which was about a week later than Cabernet Sauvignon.2.All raw materials were well-matured,and suitable for making high quality dry red wine.The general physical and chemical indexes of the single variety wines were normal,and the quality of wines.were good,total phenols content of the tested wine samples were from high to low in order:Dunkelfelder T>Cabernet Sauvignon(CK)>Tannat>Syrah>Cabernet Franc>Petit Verdot>Bei Hong>Marselan>Sangiovese;the tannins content were from high to low in order:Dunkelfelder T>Tannat>Cabernet Sauvignon(CK)>Bei Hong>Cabernet Franc>Syrah>Petit Verdot>Marselan>Sangiovese;the total anthocyanins content were from high to low in order:Marselan>Tannat>Syrah>Cabernet Sauvignon(CK)>Dunkelfelder T>Petit Verdot>Bei Hong>Cabernet Franc>Sangiovese;the chroma value were from large to small in order:Tannat>Dunkelfelder T>Marselan>Cabernet Sauvignon(CK)>Syrah>Petit Verdot>Cabernet Franc>Bei Hong>Sangiovese;the hue value were from large to small in order:Sangiovese>Petit Verdot>Tannat>Bei Hong>Cabernet Franc>Syrah>Marselan>Dunkelfelder T>Cabernet Sauvignon(CK).3.Wine sensory evaluation results show:Marselan,Dunkelfelder T,Tannat wines’ score higher than Cabernet Sauvignon(83),respectively 86,86,85;Syrah wine’s score was same as Cabernet Sauvignon(83);Cabernet Franc,Petit Verdot,Bei Hong and Sangiovese wines’ scores lower than Cabernet Sauvignon,respectively 80,78,76,73.Above all,under climate conditions of Eastern Foot of Helan Mountain Region in 2016,the comprehensive performance of enological characteristics of grape varieties were better,all suitable for making high quality dry red wine and popularizing in Region,one of varieties Sangiovese needs to be further studied. |
