There has been a remarkable increase in the food safety crisis recent years with the development of modern science and technology,which brought tremendous pressure on the government supervision.Crisis management theory has gradually matured since the 1980 s.Well-known scholar Robert Heath proposed the 4R theory of crisis management,namely Reduction,Readiness,Response,Recovery.The main content of reduction is risk assessment and risk management,which is the most important but most easily ignored stage.According to different subjects,food safety crisis management can be divided into enterprise crisis management and government regulation.The crisis management of food safety in colleges discussed in this paper is more similar to government regulation.The subject is the college,and relationship between colleges and canteens is the relationship between Party A and Party B,and the relationship between supervision department and the enterprise.Our results indicated that the food safety of university should be administrated with both intuitive perspective and specific angle,for conforming to the management of food safety crises in colleges under a specific model.We summarized the current theory of food safety crisis management,and analyzed several typical business model of domestic college canteens.Furthermore,we try to build a reasonable model to reduce,prepare and response the potential food safety crises in Soochow University.Risk assessment and risk management formed a complete crisis reduction chain in order to reduce thefood safety risk.Risk assessment has been done from two aspects,on the one hand analyzing the risk during the whole process of certain model,according to the historical event analysis method,on the other hand,a knowledge-attitude-practice(KAP)survey about food safety was conducted among 507 undergraduates in Soochow University.The average score of food safety knowledge was 6.334±1.481,and the score in medical students was higher than that in non-medical students.The most of college students attached importance to food safety,and the internet had influenced college students' food safety knowledge and practice significantly.Risk management included establishing a reasonable access mechanism and setting up an effective regulatory system.At the same time,a feasible method for early warning of crisis in colleges and universities was put forward.
