Catering industry is an important industry of the people's livelihood, and has always been a growth industry. For more than 30 years of reform and opening-up, the catering industry has transformed itself into the backbone of a society. It has play a crucial role in various aspects such as culture, employment and consumption. As the economy in China grows rapidly, the people in this country are more willing to pay some attention to their health. The gap between food production and consumption link is getting wider and wider which results in a fact that people prefer to focus on the problems of food safety.This thesis introduces some theories on the supervision and administration of catering industry, including the definitions of related concepts, HACCP theory, quantitative grading of food hygiene supervision and risk analysis theory. After that, from the perspective of government regulation, it analyzes the present situation of food safety regulation of catering industry in Hexi district concerning regulatory agencies, institutions and specific measures. This thesis, then, illustrates the problems of the regulation of catering services. Based on the advanced experience of the supervision and administration of food safety at home and abroad, the author tries to put forward some countermeasures and suggestions on the supervision mechanism of the food safety in catering industry, which could be used to promote our country to form a more systematic and pointed food regulatory mechanism in catering industry. The author hopes that not only can this thesis improve the government's emphasis on the awareness of food safety in catering industry, but also reduce its risk, which plays a positive role on elevating the level of food safety, so as to ensure the food safety more effectively and efficiently in catering industry.
