With the development of Chinese economy,the catering industry made a rapid development,has become a pillar industry of the third industry of our country,and the industry of foreign catering continues to grow in China,a variety of exotic dishes such as Japanese and Korean cuisine develop fast in our country.Although foreign cuisine has a better chance of development at home,however,as the same to the traditional catering industry,the high turnover rate of employees is also an important issue that bothers the development of foreign cuisine in our country.In addition,compared with the traditional food and beverage industry,foreign cuisine with a short time to develop.cookers and other core technical personnel in our country are relatively scarce,the demand is over supply,which makes the core staff more easy to change job,thus makes such core staff turnover have more possibility to live the organization.Therefore,effective control of employee turnover,especially the turnover of key employees,plays an important role for the exotic cuisine to have the healthy and rapid development in our country.Based on this,the paper makes a research on the key factors of core employee turnover of exotic cuisine,and on this basis,to seek effective ways to reduce employee turnover rate.This study mainly stands on previous scholars' theories about the turnover turnover model,then understands the present situation of turnover,and find scholars study on the turnover factors mainly from three dimensions: personal factors,organizational factors and external environmental factors.Based on this,this paper combined with the characteristics of China's catering industry,after analyzing characteristics of Chongqing foreign cuisine industry,grasp the present situation of catering industry turnover and exotic cuisine,Chongqing cuisine industry analysis of the factors affecting the foreign employee turnover,the core member of Chongqing city foreign cuisine industry work questionnaire and data recovery,application of factor analysis and regression analysis to analyze effect factors method on internal factors of personal factors,the organization and the external environment for employee turnover,find the core motivation affects the turnover effect,can effectively control and management on employee turnover.Through the literature review we found that the key factors affecting the turnover are the main external factors such as age and gender of individual factors,workintensity,organization status within the organization factors.Through empirical analysis,this paper found that the employee's personal factors,such as the possibility of turnover intention,women is lower than that of men.And marital status,age,education and work experience and other personal factors influence on employee turnover intention has no significant difference,does not fit the organization internal factors and staff expectations against relationships with employees and the organization has an important effect on employee turnover,the external environmental factors in addition to employees get a new job to the extent also have a great influence on employee turnover.Based on the fact that the enterprise can control is the main internal factors,and combined with the present situation of enterprise,this paper proposes effective countermeasures to reduce the turnover of core employees from corporate culture,staff recruitment,training,salary and welfare system and occupation development etc.
