With the development of economic society and the improvement of living standards in our country,Obesity is increasingly becoming a major threat to the people's health,causing high incidence of multiple chronic diseases such as diabetes and coronary heart disease.Adapted to this,dietary replacement meals characterized by low calorie intake are gradually accepted by consumers and become a dietary choice for overweight and obese people.But up to now,the vast majority of such products on the market focus on reducing calories and satisfying essential nutrients,while the satiety is generally poor and the consumer experience is poor.This article focused on the screening of the polysaccharides combination with high and stable viscosity in acidic(stomach)and neutral(intestine)environments,formula powder with low calorie,abundant nutrients and good satiety was developed and evaluated edible effect.1.Screening high-viscosity combination of polysaccharide colloids in acidic(stomach)and alkaline(intestine)environments.State shear viscosity of compounding among konjac gum,xanthan gum,sodium alginate and guar gum was measured in simulated gastric fluid and intestinal fluid using a rheometer to screen the stable and high-viscosity combination of polysaccharide colloids.When the two colloids were compounded,konjac gum and xanthan gum at the ratio of 1.5:1.5 exhibited a high viscosity in simulated stomach fluid and intestinal fluid.When the three colloids were compounded,the ratio of konjac gum: xanthan gum: sodium alginate was 1.5:1.25:0.25,high state shear viscosity could be maintained in both simulated gastric fluid and intestinal fluid,its viscosity was higher than the viscosity of konjac gum and xanthan gum at the ratio of 1.5:1.5.the best polysaccharide gel combination was konjac gum: xanthan gum: sodium alginate = 1.5:1.25:0.25.2.According to the nutrition requirements of special medical formula food and the dietary characteristics of the obese people,a low-calorie formula powder with compound food colloids,medium-chain triglyceride and oat as functional ingredients was designed for obese patients.Optimizing the addition amount of milk powder,fructose,food colloids and temperature through sensory evaluation,the best formulation for powder was that skim milk powder 32.33%,soy protein isolate 9%,MCT microcapsule powder 3.67%,linseed oil microcapsule powder 1%,safflower oil microcapsule powder 3.33%,crystalline fructose 23.3%,maltodextrin 7.33%,4% of compounded food colloids,10% of oats,5.7% of vitamin and mineral powder had the best sensory quality,and the best brewing temperature was 60°C.Calorie of formula power is 108 kcal,which is only 22% of normal meal.Each product can provide 33.01% minerals and 37.8% vitamins for a normal meal.The formula powder indicators are all in line with national standards and well accepted.3.Efficacy evaluation of formula powder on obese mice.Established a nutritional obesity model with Kunming male mice,Feed them with ordinary animal feed,formula powder,a commercial meal replacement powder respectively.Body weight,water intake,blood lipids,liver lipids,and fecal lipids were measured.The results showed that formula powder reduced body weight,blood lipid levels,and increased water intake compared to the negative group significantly(p<0.05).Cholesterol(TC)and triglycerides(TG)in the liver decreased,and in the feces increased,improve fatty liver and reduce fat cell volume significantly.Formula powder had a certain effect of weight loss and lipid-lowering.4.20 obese people received 1 packet formula powder for dinner every day for 35 days to investigate the effect of formula powder as a meal replacement on body weight loss.The body weight and serum lipid levels were measured before treatment and after treatment.satiety were measured.The results showed that weight decreased 4.74 kg for average,value of TC,TG,and LDL-C decreased from 5.7 mmol/L,2.2 mmol/L,3.2 mmol/L to 4.4 mmol/L,1.5 mmol/L,2.5 mmol/L,respectively,the value of HDL-C was from 1.0 mmol/L increased to 1.3 mmol/L.Satiety index of formula meal is higher than the glucose.It indicated that formula powder can help loss weight,improve blood lipid levels,enhance satiety.
