Hawthorn is a unique plant resource in China.Hawthorn fruit is a kind of fruit with both medicine and food.The functional ingredient of hawthorn fruit is total flavonoids,organic acids and the total antioxidant capacity derived from different components in Hawthorn Fruit.There have been research reports that hawthorn flavonoids and other functional ingredients were related to hawthorn fruit weight,hawthorn fruit size,hawthorn fruit hardness,hawthorn pulp core ratio,hawthorn juice total acid content,antioxidant activity,reducing sugar content,total flavonoids content,absorbance and electrical conductivity.It provides a scientific basis for consumers to choose hawthorn fruit correctly.However,there is no report on the correlation between flavonoids and other functional ingredients and their sensory and physical and chemical indexes of single species of hawthorn fruit.Hawthorn variety of Xiaojinxing is the most common varieties of hawthorn cultivated in Yantai area.To guide people on the same species of hawthorn fruit selection and rational use,we use a variety of Xiaojinxing hawthorn fruit as a material,through three consecutive years of experiments,each year collected 60-70 samples,divided into three groups.The hawthorn fruit was grouped according to the single grain weight,and the sensory indexes and the physical and chemical properties of the hawthorn fruit were determined and analyzed in this paper.This paper mainly draws the following conclusions:(1)Analysis of the correlation between total flavonoids content in hawthorn juice and sensory and physical and chemical indexes of hawthorn fruit.The results showed that the total flavonoids content in hawthorn juice was strongly negatively correlated with the single grain weight of hawthorn fruit,the diameter of hawthorn fruit and the hardness of hawthorn fruit.The content of total flavonoids in hawthorn juice was positively correlated with the total acid content,antioxidant activity and reducing sugar content of hawthorn juice.The content of total flavonoids in hawthorn juice was positively correlated with the electrical conductivity of hawthorn juice.The content of total flavonoids in hawthorn juice is strongly correlated with the ratio of the kernel of hawthorn fruit,but the relationship is not clear.The content of total flavonoids in hawthorn juice is of moderate intensity to the color value of hawthorn fruit juice,but the relationship is not clear.The correlation between the total flavone content in the hawthorn juice and the pH value of hawthorn juice was not significant.(2)Analysis of the correlation between antioxidant capacity of hawthorn fruit juice and sensory and physical and chemical indexes of hawthorn fruit.The results showed that antioxidant capacity of hawthorn fruit juice was strongly negatively correlated with the single grain weight of hawthorn fruit,the diameter of hawthorn fruit and the hardness of hawthorn fruit.The antioxidant capacity of hawthorn fruit juice is closely related to the content of total flavonoids in hawthorn juice.There is a strong positive correlation between the antioxidant capacity of hawthorn juice and the reducing sugar content of hawthorn juice.The antioxidant capacity of hawthorn fruit juice is positively correlated with the electrical conductivity of hawthorn juice and the total acid content of hawthorn juice.There is a strong correlation between the antioxidant capacity of hawthorn fruit juice and the nuclear ratio of hawthorn pulp,but the relationship is not clear.There was no significant correlation between the antioxidant capacity of hawthorn fruit juice and the pH value of hawthorn fruit juice and the value of hawthorn fruit juice.(3)Analysis of the correlation between the total acid content of hawthorn fruit and sensory and physical and chemical indexes of hawthorn fruit.The results showed that there was a significant negative correlation between the single grain weight of hawthorn fruit,the diameter of hawthorn fruit and the hardness of hawthorn fruit.There was a significant positive correlation between the electrical conductivity of hawthorn juice and the total acid content of hawthorn juice.The total acid content of hawthorn fruit juice also has a strong positive correlation with the total flavone content of hawthorn fruit juice and the antioxidant activity of hawthorn juice.The total acid content of hawthorn juice is negatively correlated with the pH value of hawthorn juice in different degrees.The correlation between the total acid content of hawthorn fruit juice and the nuclear ratio of Hawthorn pulp was not significant.There is no significant correlation between the total acid content of hawthorn juice and the chromaticity value of hawthorn juice,and the relationship between positive and negative correlation is also uncertain.In summary,there is a strong positive correlation between the total flavonoids content,antioxidant capacity and total acid content of hawthorn fruit.The main active components of hawthorn fruit have strong negative correlation with the single grain weight of hawthorn fruit,the diameter of hawthorn fruit and the hardness of hawthorn fruit.Therefore,when consumers choose the hawthorn fruit of variety of Xiaojinxing,choose from the function of the hawthorn fruit and choose the correlation according to the correlation.
