This study was used high-amylose maize starch as raw material,adopting physical and chemical modification methods,made into prepaste starch,citric acid esterification starch and prepaste starch esterification,then the three modified starch was subsequently interfered with the high-carbohydrate diet rats,called intervention group(PG)prepaste starch,citric acid esterification intervention group(ES)and prepaste starch esterification starch group(PES),respectively.Finally to normal(NC),high amylose corn resistant starch intervention group(HM)and high-fat diet group(MC)as the control,by measuring the rat body weight,lipid content,oxidative stress,short chain fatty acids,gut microbes,such as the indicators,evaluation of four kinds of means of intervention for high fat diet rats sugar metabolism,intestinal flora species abundance and diversity of intervention effect.Results show that the first rat gut microbes directly or indirectly involved in lipid metabolism,and lipid metabolism,short chain fatty acid content there is a close relationship between obesity and eventually,this topic found obese rats there exist more thick wall door,fewer bacteroidetes,and resistant starch intervention group has certain inhibitory effect on obesity,although an increase in intestinal flora abundance and has no obvious effect on microbial diversity,but the intervention group can reduce the proportion of thick wall door and bacteria-the bacteroidetes door,and to increase the number of beneficial microbes,reduce pathogenic bacteria content,including ES group intervention effect is best.Next in lipid and content of short chain fatty acids(SCFA),obesity rats contains SCFA and higher saturated fatty acid,and the intervention group content of rats was significantly decreased,and ES and PES group intervention effect is best.In addition by colon tissue of rat after HE staining observation found that obese rats have a lot of fat droplets,while the intervention group effectively improve this kind of phenomenon,oxidative stress and intervention group rats MDA,SOD,gsh-px content change results show that compared with normal group,high-fat diet can cause oxidative damage to rats,and the intervention group can improve the damage.In combination,the four resistant starch showed good effect of inhibiting the metabolic disturbance caused by high glycemic fat diet,among which the intervention effect of ES group was the best.
