Functional beverage and food are special products to regulate human body function,for which people have gradually deep-level needs.The research and development of functional beverage and food has gradually become a hot spot in the food industry in the 21 st century.In this paper,grape and ginger were used as raw materials to develop a new type of ginger juice beverage with unique flavor.The antioxidant activity of ginger juice beverage in vitro was analyzed.Furthermore,the antioxidant activity and safety of ginger juice beverage were studied by animal experiments.The grape peel was added into breakfast powder to obtain ready-to-eat breakfast powder with antagonistic effect on arsenic toxicity.The main results are as follows:?1?The optimum formula of grape-ginger juice beverage was studied.Based on sensory evaluation,the formula of grape and ginger-juice beverage was determined by single factor experiment and orthogonal experiment.The results showed that the optimum formula of grape-ginger juice beverage was 30% grape juice,15% ginger juice,8% sugar and 0.25% citric acid.?2?Feeding-mice experiment of grape-ginger juice beverage for 30 days and antioxidant test in vitro.According to the procedure of safety evaluation of food safety toxicology?GB15193.1-2014?,the safety of grape-ginger juice beverage was evaluated.The results showed that the mice grew well in the 30-days feeding duration.After the end of feeding,the viscera-body ratio and blood biochemical indexes of each dose group,which preliminary indicated that grape-ginger juice beverage was a safe and non-toxic beverage.Grape-ginger juice beverage can effectively scavenge hydroxyl radicals and ABTS+· free radicals in a certain concentration range,and exhibited high antioxidant activity.?3?Antagonistic effect of grape-ginger juice beverage on chronic toxicity of arsenic?As?in mice: mice were fed with grape-ginger juice beverage containing 10 mg/LAs for 56 days and 12.5 ml/kg by gavage.The antioxidant indexes were measured at the end of gavage.The results showed that arsenic exposure could cause different degrees of damage to liver,small intestine and kidney tissues of mice,and the contents of triglyceride?TG?,total cholesterol?TC?,alanine aminotransferase?ALT?,aspartate aminotransferase?AST?in serum of mice in the arsenic exposure group were significantly increased.Compared with the arsenic exposure group,the serum triglyceride?TG?in the 12.5 ml/kg intervention group was significantly higher than that in the arsenic exposure group.Total cholesterol?TC?,alanine aminotransferase?ALT?and glutamic oxaloacetic transaminase?AST?activities were obvirously decreased.The contents of glutathione?GSH?,hydrogen peroxide?H2O2?and malondialdehyde?MDA?together with superoxide dismutase?SOD?activity were increased in liver,small intestine and kidney tissues of mice in 12.5 ml/kg intervention group,which effectively alleviated arsenic toxicity.?4?Antagonistic effect of grain breakfast on arsenic-induced toxicity in mice: mice were exposed to 10 mg/L As-water for 60 days.The intervention group was given 7.15% or 14.3% grain breakfast while drinking 10 mg/L arsenic solution.At the end of the experiment,the antioxidant indexes of serum,liver,small intestine and spleen of mice were detected,and the sections were observed.The results showed that arsenic exposure could cause oxidative damage and structural damage to the serum and liver,small intestine and spleen of mice.After intervention with grain breakfast,the SOD activity and GSH content in serum and liver,small intestine and spleen of mice in the intervention group increased,while the content of H2O2 and MDA decreased,and the structural damage of mice tissues induced by arsenic also had a better mitigation effect.
