At present,there are many kinds of juicers with different positions,such as home-used juicer,cooking juicer,portable juicer for personal use,self-service juicer for shopping malls,etc.The juicer in the juice store is directly used in the home juicer,but the design of commercial juicer for the service system of the juice store is relatively less studied.In the existing service process of juice stores,backstage staff need to carry out complex and long pre-processing(fruit cleaning,peeling,pitting,slicing,etc.)to cooperate with the juicer to make the corresponding juice,resulting in customer satisfaction and service efficiency decline.Based on the concept of service design,this paper designs and studies the service system of juice stores,and optimizes the service flow and juicer products of juice stores by using the service design method,so as to improve the service efficiency and customer experience satisfaction of juice stores.Firstly,this paper makes a literature study on the concept,principles,methods and processes of service design.Then from the point of view of service design,through on-the-spot observation,stakeholder interviews and questionnaires,the service scenario,common fruit and its processing flow in juice stores are studied and analyzed,three main role portraits of frontline staff,backstage staff and customers and the service blueprint are established.Through analyzing blueprint by touchpoint tool,requirements of juice store service system for service processes and commercial juicer are excavated.Finally,in the aspect of service process optimization,the link of "fruit pre-processing" is moved to "pre-service" stage to reduce customer waiting time and improve service efficiency;in the aspect of commercial juicer design,through modular design,the functions of fruit peeling,juicing and freshness prompt are integrated,so that juicer can fully participate in the service process,which will enhance the efficiency of backstage staff in fruit processing,relieve customers' concerns about fruit freshness.Then the optimization and reconstruction of the service flow of the fruit juice store and the product design and evaluation of the commercial juicer are completed.In this paper,through theoretical research and design practice,the feasibility of service design concept into juice store service system is verified.Meanwhile,the design method and case reference are provided for optimizing juice store service system and commercial juicer product design.
