Oats,also known as "naked oats" in China,are belonging to Avena of Gramineae and Gramineae.It has high nutritional value,which can reduce hyperlipemia,hyperglycemia,and help to control weight;it is beneficial to the health of gastrointestinal tract and is a kind of the best nutritional food.At present,more than 70% of oats in China are processed into oat flour,and the processing amount of oats is less than 15%.In this dissertation,oats with hulls were chose as the raw material for processing.According to the structure and characteristics of oats and the demand of oat food,a production line with an annual output of 40,000 tons of instant oatmeal was designed;also the quality control and standards in the production process were put forward.The main contents are as follows:1.Referring to the international and domestic grain processing technology design model,the vertical transport method is adopted.According to the characteristics of oat structure and product standards,the oat production process is mainly divided into five parts: cleaning system,dehulling system,kilning drying system,cutting system and flaking system.Process analysis of each part to determine a complete design of production process for instant oatmeal,including two kinds of products: quick-cooking oatmeal and instant oatmeal.2.According to the determined process flow and production quantity,combined with the stability of equipment operation,the cost of later maintaining and the requirements for assurance of product quality,determine the equipment model for each process flow;according to the designed process flow and selected equipment,with the purpose of convenience for operating and maintaining of the equipment,and production management,carry out the plane layout of process equipment,and complete the layout plan of five-story plant.3.The key process parameters of hulling,lipase killing and flaking were determined.The feed volume: 3t / h,the moisture content of the oat: 9.5 ± 0.5%,and the rotation speed of the huller: 1550 r / min;the output of the killing tower is controlled at 6-10 t / h,with T0 = 102,T1 = 96,T2 = 99,T3 = 99,T4 = 99,T5 = 99,T6 = 102 circulating lipase killing;the temperature of the flaker is 95 ?.4.Test points should be set during the process of hulling,lipase killing,and flaking etc.to check and analyze hulling rate,hull content,moisture,lipase activity,propose quality control standards and guide the production for every process of oatmeal processing,ensure the quality of finished products.
