Since the reform and opening up in the 1970 s,China has been participating in the process of globalization at an unprecedented speed of development.China has moved towards the center of the international arena step by step.Through continuous reform and opening up,China's communication with the rest of the world has become increasingly close and frequent. In this context,China is facing both opportunities and challenges, such as cultural differences, language differences and so on.Language is the carrier of culture. It can be said that language plays an irreplaceable role in economic communication and cultural exchanges, and translators also play a considerable role in the communication between China and foreign countries.Translation is not simply the correspondence between the source language and the target language, but it should be a text that can accurately express the real intention of the original author. The translation should conform to the linguistic logic of the readers after the translators taking into consideration of the factors of politics, economy, culture, linguistic thinking, linguistic communication habits and other factors. This paper is an excerpt from best-selling author Gary Quinn's Irish whiskey. This translation practice report is guided by the Theory of Translation as Adaption and Selection in ecological translation.Irish whiskey mainly tells the development story of Irish whiskey and the introduction to the existing whiskey distilleries and whiskeys in Ireland, which can be said to be a miniature of Irish wine culture. This book can help many readers better understand the culture of whiskey and the Irish culture behind it.This book belongs to the information-type text, which emphasizes the transmission of real information, knowledge, culture, ideas, etc. Its language is characterized by simple and clear language with strong internal logic. Therefore, the translator should accurately grasp the internal logic of the original language, accurately convey the author's intention, and improve the readability of the translation. The Theory of Translation as Adaption and Selection in the Eco-translation Theory selected in this report emphasizes that translators should select the translation with the highest integration applicability under the condition of adapting to the ecological environment of the source text. The most important guiding principle of translation isfocused on three-dimensional transformation, that is,adaptive selection and transformation in linguistic, cultural and communicative dimension. In the writing of this paper, the translator tries to translate the original text through the multi-dimensional adaptation of the original language,so as to be able to convey the real information of the original text concisely and retain the style of it.Moreover, the three-dimensional translation method is used to make the translation more in line with the target language readers' linguistic, cultural and communicative habits.
