The Application Of Industrial Engineering Method In The Field Management Of College Canteen

Nowadays,industrial engineering methods have quietly entered the modern enterprises,especially the 5S(6S and 7S)activities are gradually popularized.The application of industrial engineering method to improve the field management can maximize the efficiency of the various factors in the field,improve the overall strength of each factor and enhance the enterprise benefit.As the enterprization and operation of the management of university canteen,related theory and method of industrial engineering has been gradually applied to university canteen on-site management,improving the efficiency of fine management,enhancement and the competitiveness of the industry.This paper is based on this background.This article first at the scene of the collected research at home and abroad based on the status of management and university canteen,summarizes the related basic theory and method of industrial engineering,especially the 7S on-site management,and industrial engineering method are described in the application of the canteen on-site management in colleges and universities.Second,By means of analyzing the college canteen on-site management present situation taking H university as an example in analysis,founding that H university existed many problems in the school canteen management as for purchasing and storage link is not standard,non-standard production and processing management,cleaning and disinfection is not complete,rules and regulations basic become a mere formality,improvement of personnel quality etc.Thirdly,the paper puts forward the concrete application plan of industrial engineering method in the field management of the school cafeteria.Use ECRS four principles for material procurement,acceptance,storage optimization,using the "5 w1h" questioning technology to improve the working process,using the 7S activity and TPM management to continuous improvement of field devices,integrated use of management,skills,management,incentive management to all aspects of management of field personnel,on-site environmental improvement using 5S activity.Finally,the practical effect of industrial engineering method is used to improve the field.Research results show that with the introduction of industrial engineering method,H university canteen on-site management level improved,not only improve the food safety and quality,and improve the labor productivity and economic benefits,employee basic business skills improved,the scene appearance be improved etc.Visible,industrial engineering method in the university cafeteria system in use is not only feasible,but also in other food and beverage industry and other service sectors should also have good prospects and great potential.
